Chicken Dinner Featured Lunch

Chicken Pita Burger

You will need:

500grams organic free range chicken breasts or thighs
1 courgette grated
1 clove garlic
1 apple washed unpeeled and grated
1 free range egg – beaten
salt and pepper to taste
wholemeal pita pockets
butter crunch or iceberg lettuce
cucumber
alfalfa sprouts
olive or avocado oil for cooking

wholemeal pita pockets are nice and easy for kids to hold and keep in the filling! Or use iceberg lettuce leaves for a bun-less option

Let’s get started

Add chicken to your food processor and blitz to create chicken mince

Wash and finely grate courgette and apple – place on paper towels to absorb the moisture.
Crush garlic or chop finely.
Beat egg

Wash and prepare lettuce and cucumber. Peel the cucumber and remove centre seeds, slice fairly thinly.
Prepare your pita’s by cutting an opening big enough to fit the pattie in not right around.

Add Chicken to a large bowl.
Mix in grated courgette, garlic and grated apple
Season with pink salt and pepper to taste not too much.
Combine all together with beaten egg and shape into patties.
Toss lightly in flour or panko crumbs and set aside.

Heat pan with a small amount of oil in frying pan add patties and cook turning when browned on one side until cooked through but still nice and moist.
You may need to add a little more as you go, be careful not to add to much – best to add a little an often as required.

Putting it together

Spread a little mayonnaise hummus inside the pita.
Slip in the pattie followed, cucumber, sprouts and finally the lettuce.

A slice of fresh pineapple when in season is a refreshing addition.
