Leg of Lamb 2kg will feed around 8 people
(so adjust for the mouths you have to feed)
2-3 cloves garlic
1 tsp paprika
Juice of 1 orange
1 bottle of red wine (the alcohol will burn off so safe for the kids)
freshly ground salt
3-4 sprigs of Tarragon or Rosemary your choice
Turn oven on to preheat 160C
To prepare:
Smash the Garlic so it’s broken open, pour the bottle of wine over the lamb.
Rub the paprika, salt and pepper over the meat and place the garlic on and around the lamb along with sprigs of fresh tarragon or Rosemary.
Cover well with foil (nontoxic)
Place in a pre-heated oven at 160 and leave to cook slowly for about 4-5 hours.
Remove from oven and rest for 10 minutes.
Serve with any of the salads in the warmer months or a vegetable mix in the cooler ones.
Bok Choy, Broccolini, spinach & Carrots, gently poach in a little vegetable stock. Are a great match!
Lay on plates and place the lamb over the top.
Smashed Roots A mix of kumara, potatoes, parsnips and carrots
Steam until tender then mash with a little butter and the of juice 1 orange. Baby potatoes in the warmer months.
