Best Slaw

A food slaw is a great way of getting plenty of nutritious vegetables in one dish and a great way to use up any left in the fridge.

You will need

¼ red cabbage
¼ green cabbage
2-3 brussel sprouts
4 large portabella mushrooms
1 pear
1 ripe avocado
1Tsp pumpkin seeds -activated Go to ‘activate your nuts & seeds’
juice of an orange and lemon
avocado oil for drizzle

Let’s let started

Finely slice the red and green cabbage then the brussel sprouts, add to a large bowl.
With a clean damp cloth wipe the mushrooms clean then slice thinly.
Roughly chop up the avocado into chunky pieces add a good squeeze of lemon juice to prevent discoloration.
Cut the pear in half and remove the core, slice thinly and place in a separate bowl. Squeeze the orange juice over and mix through.
Add mushrooms, avocado and pear to the cabbages drizzle with avocado oil and gently combine. Sprinkle with the pumpkin seeds.

Great served with our sticky chicken nibbles or fish bites.
Add boiled eggs, some cooked chicken or feta cheese is a tasty addition for a one dish meal.
