You will need:
2 medium size courgettes – shredded
1 ripe avocado – sliced or diced
1-2 Tbsp pomegranate seeds
1 Tbsp chopped dill fronds, more or less depending on your taste.
juice of ½ a lemon
lemon infused olive oil for dressing – I use The Village Press Oils
Let’s get started:
Shred the courgettes with a peeler that has the teeth for long shreds or use a spiralizer if you have one.
Place in a serving dish. Squeeze the lemon juice over a little at a time so you don’t overdo it.
You are only wanting to lightly coat the courgettes. Do the same with the lemon oil just enough to lightly coat them. Gently massage the oil and juice through the courgettes and set aside.
Slice the avocado and squeeze a little lemon juice over them to prevent them going brown. Gently mix with the courgettes the sprinkle the pomegranate seeds and chopped dill over the salad and lightly mix being careful not to squash the avocado.
Suggestions
This is a great base for a full meal.
Try adding some protein like seafood, chicken, tofu really the choices are yours.
