Recipe
420ml organic pure coconut milk (look for pure coconut milk nothing added!)
2 Tbsp chia seeds
1 Tbsp shredded coconut
1 Tbsp dried organic cranberries soaked in boiled water for 5-10 mins
to plump up
ΒΌ cup frozen or fresh raspberries
1tsp coconut sugar or pure organic maple syrup (optional)
Drain the cranberries and place on paper towels, pat to remove excess moisture.
In a glass or china bowl mix all ingredients together, if using fresh berries gently fold them in after you have mixed all the other ingredients so as not to squash them. Serve with seasonal fruit or berries (use frozen if fresh not available).
Cover and refrigerate overnight.
I found it best to leave for at least 24 hours for all the flavours to infuse with each other the chia seeds will be of more benefit pre-soaked.
Topping suggestions:
Chopped almonds or other nuts of your choice – sunflower & pumpkin seeds will also add to the nutritional value.

Use other fresh organic seasonal fresh fruits and berries or frozen as a topping or they can be served as a side with the delicate yet power packed breakfast.
Many fruits will bleed if added for the overnight process why adding just before serving is best.
Variations :
Mandarin Delight 
Juice and flesh that comes out of 3-4
Same quantity of chia seeds
Reduce coconut cream to allow for the mandarin juice
Mix well cover and refrigerate over night.
Garnish with mandarin segments / zest of orange optional
Choco Delight
