
*ingredients
1 large beetroot
1 large carrot
1 zucchini/courgette
1 cup pomegranate seeds, messy but fun and they taste great!
1 large granny smith apple (optional, if you feel and apple and strawberries too sweet for you leave one out)
fresh mint, flat leaf parsley or basil
juice and rind of one orange
a generous handful of fresh strawberries when in season mashed – you could use frozen if out of season or dried and rehydrated.
mix of seeds your choice – sunflower, pumpkin, sesame even toasted pinenuts are delicious (see post for activating you seeds and nuts)
½-1Tbsp good quality Extra Virgin Olive oil or one of their infused oils
*Prepping
Grate and squeeze the orange add zest to bowl add currants set aside for about an hour.
Wash and grate apple skin on, toss in orange juice.
Grate the carrot & zucchini add all of the above to a large serving bowl.
Oil your hands or wear gloves if you prefer peel and grate beetroot using the finest grate this is important as the beetroot won’t taste as strong. The oil will stop the beet from staining your hands.
Now to the pomegranate, cut in half with the cut side on your palm over bowl tap the pomegranate hard with a wooden spoon the jewels should fall out into the bowl. Pick out any of the white pith as it is bitter and you do not want that!
Set aside until needed.
Add to bowl with the mashed strawberries.
Roughly tear herbs and toss all together, lastly gradually drizzle the olive oil over and gently fold through salad (use your discretion here and taste as you go too much oil will spoil it.)
I like to add a generous handful of mixed seeds through just before serving.
Suggestions:
Serve in individual bowls or on a bed of mixed greens.
Great served with fast grilled fillet of fish, Salmon, Tuna are a lovely combination.
Also great with organic Free-range chicken.
Another nice addition is cup or 2 of cooked quinoa tossed though just before serving turns your salad into a complete meal, quinoa is a good source of plant-based protein.
Left-overs: great in wholemeal pita bread or wrapped in cos lettuce leaves.
Or just because you feel like a bowl of goodness!
