For the love of Sardines

This will have you loving Sardines..


☆ you must buy really good quality Sardines.. it does make a huge difference! Trust me 

Ingredients

Broccolini sliced lengthways
Spinach leaves
Red Bell pepper sliced
Strawberries sliced
Balsamic vinegar
Fresh Basil diced
Slivered almonds
Quinoa
Sardines – I use “Smoked Baltic Sardines”
The Village Press extra virgin lemon olive oil

Prep all your vegetables

Get your quinoa cooking, as per instructions on the packet.

Heat a fry pan add a drizzle of olive oil just enough to prevent sticking and burning. Add broccolini and sauté gently just until it softens remove and set aside.
Next add you slivered almonds toast off until they just start to brown.
Now, soften off your bell peppers the same, then the spinach leaves, be careful you just want wilt them slightly.

Lastly the strawberries, lower the heat and very slowly begin to soften them add a “splash” of Balsamic vinegar, when that has evaporated remove strawberries. Stand over them as they heat through, you want them to still have a little bite.

Now for the Sardines, if the pan is dry drizzle a little oil allow it heat up a but then gently warm your sardines, this won’t take long. Turn them once to warn through the other side then remove.

Putting it together:

Place a few spoonful’s of Quinoa on a platter then arrange your spinach, broccolini, peppers, strawberries. Now lay those precious & delicious Sardines around the vegetables, sprinkle over with basil and toasted almonds.
I drizzled a little The Village Press extra virgin lemon olive oil over just to make all the flavours dance!
