Quick easy tomato sauce for meatballs and spaghetti

Recipe

½ onion
1 clove garlic
1 tin of organic tomatoes
pink salt and pepper to taste
½ tin of water swish it around the tin
2 fresh basil leaves

Place all in blender and blitz until all combined.
Pop into a pot and over a medium heat bring to a boil the reduce heat and simmer until thickened and rich in flavour.

While the sauce is cooking gently cook the Meteor Balls and spaghetti – either traditional, spaghetti squash or courgette spaghetti.

Combine them all together and enjoy!!

Tips:

Make extra of everything and freeze portions sizes for a quick meal instead of resorting to an unhealthy takeaway. Cooked spaghetti freezes very well and only needs to have boiling water poured over it to heat through.
Extra meatball are a great addition to the school lunch box – pop 2 or 3 onto a stick or add them to a wrap with some fresh salad.
They are great to freeze cooked or raw if the chicken hasn’t already be previously frozen.
Keep leftovers in fridge for a quick protein snack after school
