Avocado & Egg

1 avocado halved and pip removed
1 boiled egg per half avocado
pink or sea salt and freshly ground pepper to taste
1-2 tsp fresh dill finely chopped
a selection of sunflower and pumpkin seeds and some almonds
seasonal fruit of your liking
juice of 1 lemon

Pop eggs in a saucepan and cover with cold water bring to boil over a medium heat, when the water boils time for four minutes turn off drain run under cold water and peel. You want them to still be fairly warm to mash.
Mash with fork a little then add the mayonnaise and mix to until egg is holding together, season with salt and pepper and stir in the dill.
Halve the avocado and give a generous squeeze of lemon juice to prevent browning and to give that little zing.
Pile egg mixture into the cavity and pile it up.
Cut up your fruit and plate up with the avocados and a handful of seeds and nuts, you can use whatever nuts you like, remember to use activated seeds and nuts.

These are great for any meal or just an after school snack.
If using for a lunch or summers evening meal make and nice big salad or a mix of lightly steamed fresh vegetables.
