1C almonds
1C walnuts
1C cashew nuts
¼C pumpkin seeds
¼C sunflower seeds
2Tbp sesame seeds
2C chopped dates
¼ C organic dried cranberries
½ C organic dried apricots chopped(organic apricots are so different, much darker in colour and very flavoursome)

Do 10 minutes ahead
Place your cranberries in a bowl and just cover with a little boiled water-still hot for 5 minutes drain well and place on paper towel
or clean tea towel, pat the excess moisture off the top.
Let’s get started
Chop your dates into chunks
Take a heavy based saucepan and put your dates and cranberries in and gently heat over a low to medium heat. You want to
soften the fruit not burn it.
Once the fruit has started to soften as become a little sticky add your nuts and seed. Now you have to watch it and stir it
constantly you can turn the heat up a little.
You are looking for the fruit to become really soft and bind all the nuts and seeds together. Be patient it can take about 5 or so minutes, trust me it is so worth the effort to make these bars.
While still hot tip onto a sheet of baking paper
Once all the fruit is soft and sticky and becomes really hard to mix you’re done!
Line a slice tin with a sheet of baking paper and spread the hot mixture, using the back of a metal spoon dipped in cold water – press the mixture down firmly so it all sticks together. You want it thick enough so it holds together about 2 cm thick.
Cover and refrigerate until set. With a sharp wet knife cut into bars, store in airtight container in the fridge.
