Smashing Jam Surprise

You will need:

1Tb chia seeds
1/2 C medium carrot finely grated
1/2C medium beetroot finely grated
1 C mixed berries -fresh or frozen (thawed if using frozen)
1 C fresh strawberries if in season or use frozen
1 Tb good quality honey or maple syrup or raw honey

Let’s get started:

Place all ingredients in blender and whizz until combined.
Stir in extra chopped berries.
Give it a good stir then pour into glass jar and refrigerate overnight.
Use however you like, remember to keep in the fridge –
It won’t last long so keep an eye on it so you know when to make the next batch.

For a quick healthy breakfast or snack ~

Toast a few slices of wholemeal bread spread with some organic butter (optional) pop on a few slices of banana and a thick dollop of Smashing Jam sprinkled with some mixed seeds.
