This is a great way to get lots of those deliciously nutritious greens into your precious ones
Let’s get started
You will require a food processor for this recipe
Ingredients:
1 cup each of:
courgette/ zucchini
broccolini (it has a more mellow flavour than broccoli)
spinach.
¾ cup fennel
¼ cup spring onions
1 clove garlic
¼ – ½ cup parmesan cheese
salt & pepper
½ cup self-raising flour
or plain with ½ tsp baking powder
olive oil for cooking
Creating your super power cakes
Firstly
grate your courgette/zucchini and with your hands or a damp cloth squeeze as much of the liquid out as you can. Set aside and pop a paper towel on top.
Chop the rest of the vegetables and set aside.
Crush your garlic
Grate your parmesan in the fine side
Measure out your flour and baking powder
salt and pepper for seasoning
Pop your oven on a low heat to keep cooked cakes hot as you make the batches.
Now you’re ready to get blitzing
add the broccolini and fennel and pulse until they begin to resemble crunchy breadcrumbs
now add your garlic, spring onions and grated courgette/zucchini, blitz again until all are well combined and no big chunks left.
Tip into a mixing bowl.
At this point get your fry pan and oil ready to go.
To your vegetable mix stir in the flour, parmesan and a grind or two of pepper and salt ( ¼ tsp) you can always add more once they are cooked.
Take a Tsp full of the mix and shape it into a ball then flatten out slightly, the numbers will depend on the size of your pan * don’t overcrowd the pan! Set aside on a cold plate while you shape the rest.
Turn your element or gas on and heat the oil until it is hot (not smoking – because of the cheese they will tend to burn a bit if you have is smoking.
Don’t overcrowd the pan, cook in batches.
You will need to keep you eyes on them and once the begin to cook give the pan a little shake. They only take a minute or so each side. You want them to burn,
They will be dark, don’t worry that is the cheese.
Check one to make sure they are cooked through.
Serve up with and nice dollop of Lewis Road sour cream and fresh crisp salad loaded with tomatoes.
