You will need:
1 ripe Papaya / Paw Paw
½ a ripe AvocadoJuice and zest of ½ Lime or small Lemon
Frozen or fresh Blueberries to garnish, around 6 per dish
Shredded Coconut – enough to sprinkle on the top of each dish
Equipment:
Blender or kitchen whizz
Let’s get started:
Remove flesh from Papaya and Avocado
Zest Lime or Lemon and squeeze the juice
Add all ingredients to your blender or whizz and blitz until well blended, you may need to scrape the sides a few times.
Place
gently in to small individual serving dishes, cover and refrigerate until cold
and ready to serve.
Topping:
Place shredded coconut into a dry nonstick pan and over a low heat gently toast, watching all the time, this is not a leave and walk away job, that will get to blacken shredded coconut!
We do not want that.
Gently move
and shake around the pan until lightly toasted.
Spread on a sheet of paper or clean dry
tea towel to cool.
Once cooled, place in an airtight glass jar until required.
To Serve:
Sprinkle with Blueberries and Coconut
