2 fresh free range eggs per person – 1 for the littlies
A few sprigs of basil
1Tbsp per omelette parmesan cheese or edam
pink salt and freshly ground pepper to taste
pumpkin seeds and pine nuts for garnish
slices of cucumber and thinly slices snow peas finely shredded spinach – per serving
coconut oil –for cooking, about ½ Tsp per omelette
Lets get started
Chop basil finely and grate the parmesan.
Prepare your cucumber snow peas and spinach – set aside along with your seeds.
In a glass or stainless bowl break in 2 eggs salt and pepper
Heat element to a medium to high heat, add the coconut oil to a non-stick pan and place on element.
Work quickly: whisk the eggs until really fluffy and pour into pan immediately. Give them a few seconds not long then gently drag a wooden spoon through the mix just shifting the egg around without stirring you are just wanting to move the egg around so it can cook evenly and keep the mix fluffy. You may need to shake the pan a little so the uncooked egg moves into the gaps. When it’s almost cooked sprinkle over the parmesan cheese and chopped basil and place lid on pan and remove from the heat. Allow sit and continue cooking and allow the cheese to melt or pop under a hot grill.
While it is resting place the cucumber, snow peas and spinach on the side of the plate. Check you omelette it should be done now and easy to flip in half and slide onto your plate.
Sprinkle with pumpkin seeds and pine nuts drizzle with a little Village Press extra Virgin Olive Oil and serve.

- if you are wanting to make one for the whole family at once just increase the ingredients per person and use a large fry pan.
- room temperature eggs are best
- a cold bowl for whisking and a strong whisk
Serving suggestion
Heated whole meal pitas are also a great way to serve them up for the kids, simply pop the pita’s on the oven to heat through the cut an opening and pile in the scrambled eggs. They can then eat them like a burger!
